Help wanted ...

     Looking for your ideas on what to do with 3 gently used beets and greens. The beets were used only once, as photo prop and are in near perfect condition, with the exception of a huge slice made in one of them to expose the blood of the vegetable. Beets are vegetables, right?

     Maybe you could leave me your favorite family recipe for borcht, or ... ahhh ... ummm ... what else would one do with beets? They are so  ... so ... so ... RED!!! Ewwww ...

Are these sugar beets? You could add them to stew...or soup...or do you have a juicer? Juice them with some apples and carrots.

Do you like those kind of beets where they are cooked & sliced and sugar & vinegar & a little corn starch put in to past a slightly thick sauce? I don't have the recipe for it but I love them fixed that way. I have not eaten any of the greens but you might use them in a salad. Helen

i've only cooked fresh beets once in my life, about five summers ago my son-in-law had grown them in his garden.   i just sliced and steamed them, and yum yum .. best tasting beets i'd ever eaten (i'm a silly one, i happen to love beets).  they've always made my hubby sick, ever since his mother tried to give them to him as a child lol).    i normally just buy and each the sliced, canned variety ... good luck ..........

Thanks for you comments on my Red entry!  Your beets look yummy!  You can just boil them until they are a little soft and serve them sliced as a vegetable side dish with your next meal..they are good with pork.  I like the with Butter and pepper...:)   I was noticing you live in Boca Ratan...my daughter almost went to college there and played soccer...can't recall the name of the school.  I dream of going to Florida sometime in the near future...you are so lucky!

Spinach salad with beets, walnuts and blue cheese dressing.  Had it in a restaurant, it's a taste sensation.  --Albert

I dont eat them, but do use them for dyeing fun stuff like t-shirts and cloth!

Silly human, sugar beets have tan or white flesh, are HUGE, and resemble jicama.
Lovely red beets like these should  have the greens cut off, be boiled until tender, skinned, sliced, rewarmed in boiling water, and served w/ butter and salt. next night, steam the greens and eat like spinach or chard, which they taste alot like.
Or put a tablespoon of pickling spice in the boiling water for the roots and 'pickle' them alittle.  Good for you, "the darker the color, the more phytochemicals".  Not my favorite, I like them pickled, and the greens.

Probably too late now but my favorite recipe for beets is Harvard Beets. It's in most cookbooks and very easy to make. Butter, vinegar and corn starch. Yummers!!! :-) ---Robbie
